Homaro Cantu – Moto Restaurant – Molecular Gastronomy

Yesterday we posted about the art of molecular gastronomy (otherwise known as the chemistry of cooking).

Visionary chef Homaro Cantu demonstrates why he’s called the Willy Wonka of Chefs by taking molecular gastronomy to a whole other level.

He is currently the head chef at his restaurant in Chicago, Moto. Moto is known for creating “high-tech” dishes which incorporate elements such as edible paper that alter our preconceived notions of what food actually is.

He also runs Cantu Designs, a Chicago-based business focused on taking the human dining experience to a new level.

He is currently working with Nasa on developing new and innovative ways of preparing food.
