10 Ideas for Turkey Leftovers

Lots of turkey left over from the holiday? Chatelaine magazine has a few quick and simple ideas.

Healthy, hip stir-fry In a large frying pan, sauté a thinly sliced onion in oil until it begins to soften. Add bite-sized turkey strips, snow peas, sliced sweet pepper and quartered baby bok choy. Drizzle with hoisin and soy sauce or just teriyaki saucee. Sprinkle with chili flakes. Stir-fry until vegetables are tender-crisp.

Friday night nachos Stir salsa with finely chopped turkey. Cover bottom of a shallow-sided baking dish with tortilla chips. Top with salsa-turkey mixture, a scattering of sliced pickled jalapeños and lots of grated cheese. Broil until cheese is melts.

Lighten up chili Instead of using ground beef, stir cubed turkey into spicy chili at end of cooking. Serve with a swirl of sour cream and lots of chopped cilantro.

Hot-pepper pizza Arrange turkey strips on a store-bought pizza crust spread with tomato sauce. Sprinkle with crumbled feta, sliced black olives and hot peppers, then grated cheese. Bake following package directions.

Tex-Mex wrap ‘n roll Place thin strips of turkey and finely chopped tomato and cucumber on a large tortilla. Squeeze a little lime juice into some mayo and stir in big pinches of cumin and cayenne. Drizzle over turkey and vegetables. Carefully wrap and roll.
