The Complete Light KitchenRose Reisman is a well-known Canadian guru of healthy living and health eating. She is a chef, a motivational speaker, columnist and TV personality. Reisman has also written eighteen cookbooks with hundreds of original recipes, many of which have been introduced to the Pickle Barrel restaurant menu.

The Complete Light Kitchen was written in support of the Canadian Breast Cancer Foundation and contains over 265 recipes that reflect Reisman’s desire to combat weight-related diseases with nutritious, lighter food choices. While this cookbook has scrumptious looking photographs of many recipes, it was attention to health and well-being that made a lasting impression on me.

The recipes are organized by entrée and main ingredient (i.e.: fish, poultry, pasta) with colored pages that help the reader navigate from one section to the next. Each recipe has an introduction that describes the end result and offers preparation tips or interesting facts about the ingredients. Reisman provides “Make Ahead” tips and suggestions for purchasing the highest quality ingredients. Nutritional analysis is also provided as well as preparation and cooking times.

Most recipes have less than six steps and contain fat-conscious ingredients that can be found in most pantries or grocery stores. Overall, this book is a must-have for all health conscious cooks. It has recipes that are simple to make and delicious to taste.
